I like to mix my stew ingredients around just like I do with my chili ingredients to make a variety of stews but here is a basic one that I like to make.
Ingredients:
10 cups water
1 pound stewing beef into small bite size pieces
1/2 pound ground beef [broken up]
2 large onions diced up or sliced
1/4 teaspoon pepper
1/2 teaspoon minced garlic
6 medium carrots scrubbed or peeled & then sliced into thick coin sizes
3 medium parsnips sliced up like the carrots
6 medium potatoes cut into 1" cubes
1/2 small turnip cut up into small pieces similar to the potatoes
1 cup lima beans or 1 can [drain first]
1 cup green beans or 1 can [drain first]
1 cup fresh or frozen peas or 1 can [drain first]
4 oxo cubes
2 tablespoons of browning mixture
Instructions:
In large pot combine all of the above ingredients except for the oxo cubes and browning mixture. Bring to a boil then lower heat to simmer. Add the oxo cubes and browning mixture. Place a lid on it the pot and simmer for 2 hours ~ stirring occassionally. Add parsley and simmer for another 10 minutes.
Serve with bread & butter or dinner rolls.
Variation:
Omit potatoes from the stew and make them seperately and mash them up to be served as a side dish with the stew.
Variation:
Substitue 1 cup ketchup in place of browning mixture.
Yield: 10 servings
COMMENTS: This is very tasty and if I ever have enough left over I try to use it as the base for a shepherd's pie. In fact, if I plan it right I make enough mashed potatoes and stew to do for two meals and then use what is left over to make the shepherd's pie. This is a great time saver because the ingredients are already made and I just have to put them together and bake them in the oven for an hour. :)
