Ingredients:
4 slices toast
2 eggs
1 piece pepperoni, bologna or pepperette
1/2 green pepper
1/4 cup milk
pinch of salt & pepper
Instructions:
Chop pepperoni [meat], onion & green pepper into small pieces. Heat the frying pan while you beat eggs, add milk, salt & pepper. Add pepperoni, onions and green pepper. Add the mixture to the preheated pan. Do not scramble or move the mixture around until the outside edges are cooked, then turn over the entire mixture and repeat on other side. You can tell when the edges are cooked by the light to medium brown colour. When both sides are cooked, add to toast and eat.
Yield: 2 servings
COMMENTS: A good breakfast, lunch or light supper. Some people like to add ketchup to their sandwich and that is ok ~ its a matter of personal taste. :)
