Ingredients:
Make your crust ahead of time you will only need a bottom layer of crust for this pie.
2 eggs well beaten
1 c brown sugar
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp salt
3/4 c evaporated milk
2 c of mashed and precooked pumpkin [pumpkin can be cooked like potatoes in boiling water and when it is soft to the fork [like potatoes] drain the water and mash thoroughly]
Instructions:
Beat eggs in large bowl. Add in pumpkin, brown sugar, cinnamon, nutmeg, ginger and salt; stir until well combined. Add in milk and mix thoroughly. Pour onto bottom pie crust. Bake in preheated 450 degree F oven for 10 minutes, then reduce heat to 350 degrees F and continue to bake for approximately 45 minutes or until filling is firm. [when you insert a knife into the center of the pie mixture it should come out clean] Cool before serving.
Serve with vanilla ice cream or whipped cream topping.
Yield: 8 servings
COMMENTS: This is a wonderful pie for Thanksgiving or Christmas or any other time you would like to eat it. If you want a more spicy taste you can add an extra 1/2 tsp of cinnamon to the mix. One of my favourites.
