Ingredients:
Make your crust ahead of time you will need a top and bottom layer of crust for this pie.
Select the apples of your choice [any kind that you like will do].
I like to make deep dish, no fuss, apple pies so this is what I put in them:
8-10 apples, medium size
2/3 c sugar
1/2 tsp cinnamon
Instructions:
Place bottom pie crust in dish. Preheat oven to 350 degrees F.
Peel, core and slice apples into bite size pieces. Place apples in pie dish. Add sugar and cinnamon together and sprinkle evenly on the apple slices. Take the second pie crust and place it on top of the apples.
Place about one cup of cold water in a clean glass and dip a fork into it and then press all around the sides evenly to crimp the edges together. Keep the fork moistened to prevent sticking. Using the same fork, and still keeping it moist, puncture holes in the top of the pie crust. Bake in the oven for approximately one hour ~ or until apples are done. Crust top should be a golden brown.
Variation: I like to make Apple Cinnamon Pies with more cinnamon and less sugar so instead of putting in the above measured ingredients in I add:
10-12 med sized MacIntosh apples [these are sweet Ontario apples]
1/2 c sugar
1 tsp cinnamon
Serve hot with vanilla ice cream. Or cool and serve with whipped cream.
Yield: 8 servings
COMMENTS: One thing I do know is that nothing smells better to men than the aroma of cinnamon as it bakes. This is my youngest son's favourite pie and he asks for it often. He likes the extra cinnamon on it too. hehe :)
