Ingredients:
3/4 cup hot maple syrup
1/2 teaspoon cream of tartar
2 teaspoons granulated sugar
1 egg white, unbeaten
Instructions:
Combine hot maple syrup, cream of tartar and sugar in top of a double boiler. Place over boiling water and add unbeaten egg white. Beat with rotary or electric beater until thick and smooth [I used to use a wooden spoon instead]. Remove from heat and use immediately. The icing will harden as it cools.
Yield: There is enough here to cover one large vanilla or white cake. Do not use any other flavour of cake as they don't taste very good together.
COMMENTS: This is soooo yummy. I entered a cake baking contest when I was 13 yrs old and everything had to be made from scratch in front of the judges. I made a princess white cake and this icing from scratch. I won 1st place in our Community Center, 1st place in Toronto, 1st place in Ontario, 1st place in Canada, 1st on this Continent and 3rd in the Internationals. :)
