Ingredients:
3 cups brown sugar
2/3 cup light cream
1/4 teaspoon maple flavouring
1/2 cup chopped nuts ~ optional
Instructions:
Combine brown sugar and cream in a heavy 3 qt saucepan. Cook over medium heat, stirring constantly until sugar is completely dissolved and the mixture begin to boil. Cook to a soft ball stage [238 degrees F] without stirring. Let cool to lukewarm [110 degrees F] by placing the pan in cold water. Beat until creamy; add vanilla and other ingredients you may have chosen. Continue beating until mixture thickens and begins to lose its gloss. Spread on buttered pan or platter; cut into squares. You can refrigerate if you choose after this stage.

COMMENTS: Yummy. One of my favourites. I never pass up an opportunity to taste maple fudge if it is available. This fudge is not to be mistaken as vanilla fudge as the taste is totally different although the colour is the same.
